Apple-Cinnamon Coffee Cake.

aythia was talking about how she likes to bake and then put up pictures of some really, really tasty looking yummies she had made. I was slightly salivating, I’ll be honest. It was also the same week that my mom had brought over a few pieces of desert for me and my sister. She had decided to make this apple cinnamon coffee cake recipe that she has had for ages. After I told
aythia how much I had drooled on my computer while looking at her pictures of cakes and whatnot, I told her about the coffee cake I had earlier that week. I maybe described it in vivid slightly orgasmic detail and she immediately and appropriately responded, “I want that recipe!”
So…I got it from my mom. I told her that I was describing how good it was to a friend and she asked for the recipe. My mom was delighted. But I have since been lazy about typing it out because well, you all know me by now. Except now it is
aythia’s birthday, so I thought I would finally get around to getting this up for her.
And, of course, for all of you as well, because you are more than welcome to give it a try. Let me know if you do and how you liked it - my mom will be thrilled to hear! (Even if she thinks when I say 'friend', I mean people I go out for coffee with and not people I read gay porn with).

Apple-Cinnamon Coffee Cake
8 apples - peeled, cored & cut (I only use 4)
1T cinnamon
5T sugar
2 ¾ C. flour
1T baking powder
1 tsp. salt
1 C. veg. oil
1 ¾ C. sugar
¼ C. orange juice
2 tsp. vanilla
4 eggs
1. Preheat oven to 350 degrees. Grease rectangular baking pan. Toss apple chunks with cinnamon and sugar. Set aside.
2. Combine flour, baking powder and salt. In separate bowl combine oil, OJ, sugar and vanilla. Add eggs to wet ingredients, mixing well. Pour ½ of batter in pan. Top with apples. Pour other ½ in & top with remaining apples. Sprinkle top with crumb mixture.
Crumb Topping
½ C. flour
½ tsp. cinnamon
4T butter (softened)
½ C. brown sugar
Combine ingredients until they resemble coarse crumbs. Sprinkle over cake and bake for 1 ½ hours or until testor comes out clean.
I hope that all makes sense, as I know zero about baking.

This weekend I am trying some of my aunt's carrot cake. Is there such a thing a chocolate carrot cake? I hope so. ;)
